If Thunderbird has added "***Spam Score:*** to the Subject of a message
(which I know is not Spam) how can I remove that?

Are you sure it is Thunderbird and not one of the agencies handling the message on its way to you?

A cursory Google suggests that it's being put there by a SpamScore
add-on, so you could try going to Add-ons and Extensions in the main
hamburger menu (or however your installation shows it, I know that
different systems can have a different ogle and grope^W^W^Wlook and
feel) and switching the add-on into an add-off (IYSWIM)

It's added by your ISP server, in order helpfully to warn you (FCVO helpfully...). Do you have any access to your mailserver? Mine uses SpamAssassin which is vicious and often rejects perfectly sound mail out
of hand. I calmed it down a bit by setting the tolerance at 4 instead of
    5. However, I still get ridiculous spam that has apparently been let
through even though it is patent rubbish.

Well, you've had a few suggestions on how to change your spam filters. I
don't actually use Thunderbird for email but I'll also offer right
clicking on your email account name and selecting settings which should
give you a few spam filtering options.

Now I'll try to answer the question you actually appeared to ask. First
go to the thunderbird folder. I'm not sure where that is on Windows,
probably in settings and whatnot under your account name. It may be a
hidden folder. Then go to <random characters>.default (your Thunderbird account), ImapMail (assuming you are using Imap), <email
provider>-maildir, INBOX (or Trash), and finally cur[*]. That will show
you a list of your emails. Find the one you're interested in, probably
by date and time saved. Open that email in Notepad or a similar editor
of your choice (not a word processor) and scroll down to the subject
line. Edit the subject line to your choice, save the file and exit your editor. I'm almost 100% certain that that will enable you to remove the
text from your email subject. Obviously take a back up first and don't
do it while Thunderbird is running, just to be on the safe side.

[*] It should (probably) look something like this: .thunderbird/aatg5d4e.default/ImapMail/.btinternet.com-maildir/INBOX/cur
