Google has the official line on why they do it:
NFL DNA tests and genetic profiling for draft candidates are used to
analyze biological markers related to athletic performance, specifically
to assess potential for power, endurance, metabolism, and injury risk.
These tests help teams create personalized training, nutrition, and
recovery programs, and evaluate a player's genetic predisposition for long-term health, such as susceptibility to injury.

It would be sad if they give up on someone that could have been as great
as Gale Sayers with bad knees or a great two sport athlete like Bo
    Jackson with a hip issue.

Eugenics just came up on TO. I have been claiming for decades that the
new DNA technologies could allow a eugenics revival. The limitations
that we had for genetic evaluation early in the 20th century that made eugenics something stupid to do, are no longer limitations. We can now identify the recessive carriers for what we think that we do not want,
and select for what we do want.

There is a company that will super ovulate a patient and create multiple embryos for a couple. They genetically test each embryo and provide a
genetic profile. The couple can then choose which embryo or embryos to implant. I put up a thread on it some time ago.

CBS YouTube video on the subject of embryo genetic screening. https://www.youtube.com/watch?v=qvVMgcJB3lk

They are dealing with probabilistic distributions of phenotypic
expectations because we do not yet fully understand the genetic basis
for most of what makes us human, and even the complex genetic diseases
are far from completely understood. The parents need to be shaken up
about what that means for their embryo selection. Their highest IQ
embryo with the lowest chance of developing the genetic disorder that
the mother has might be 119, but the range of possible outcomes falls
below 100. Sure it could be higher, but it is dependent on the shape of
the distribution. The company wants to claim that it is a normal distribution, but that likely is not true. The distribution likely has
a long tail down into the lower ranges because so many environmental and spontaneous genetic events can mess up brain development.
