Is it possible to buy a minmalist landline
telephone set nowadays? I meant one that
has NO chips nor ICs, no Wifi, no FM
    transmitters, no hidden rechargeable
    battery.... nothing too modern.

Just plain old simple telephone set
    with handfree. :)

I don't know of anything modern. There are quite a few "antique" and
"vintage" rotary phones on Ebay. Modern POTS is still compatible with
dialing through rapidly breaking the connection. Once a while back I
tried dialing by just rapidly tapping the hook or whatever that is
called, and it worked, though it takes some skill to get the timing
    right.
