    We had a slight change of plan and ended up changing our plan of attack
    for cooking our rack of lamb. We usually brown the rack on all sides in
    a pan and finishing it in a hot oven or searing it on direct heat in
    the BBQ and then finishing it offset. Tonight we just roasted it in a
    hot oven. The rack had been marinated and we preheated the oven to 450.
    It went in for 35 minutes and was then taken out and sat for 10 minutes
    before I cut it up. I have to admit that it was just slightly overcooked
    for my taste but it every chop was pink and they were incredibly tender.
    We were thrilled with the results.
