According to the butcher, they were only getting Prime steaks in for the summer. The last time I bought one, he said it was the last of the year.
I'm glad that was not the case.

I'm going to try a new thing. I'm going to use water flavored with beef
BTB or equivalent to boil egg noodles. Then, I'll take out the noodles
to put in the fridge for reversion. I'll reduce the water to make a
sauce, then use that for the noodles, adding thinly sliced beef and
whatever else--maybe cubed carrot and finely minced onion. Maybe I'll
add a little wine to the sauce.

You might like Korean black bean noodles.

True. This dish is definitely trending on da mainland. All da kidz
love it. They gobble it up, especially in Montana.

After all, it was invented by da Hiwayans long ago, before the honkies
came (and the asian invaders that soon took over).

I might see if I can find it at the grocery store, and I'll put in a
    good word for yoose Uncle.

Curiously, I had black beans for dinner, and leftover for breakfast.
They were 49 cents a can. I pureed them in the blender, then did the
refried thing with sunflower oil. A little Monterey Jack and TB Fire
    Sauce to finish.

It's not - but it might be if you think anchovies are disgusting and/or taking GLP-1s.

If someone doesn't like anchovies in an assertive way, that's a red flag. Disolved and integrated anchovies are one of the best sources of Umami
    ever.

I've made kim chee with Korean anchovies - small fishes packed in salt water. The
Koreans probably just use the fish straight but I put it through a strainer. It easily flows through. My wife who was raised by a Korean step-mom, said it tasted
like her mom's kim chee. That's always my target. Her mom added raw oysters
to her kim chee but that's just taking things too far.
