Very trashy. You want the alcohol but have infantile taste buds and
can't handle the flavour of the drink. So you add a crappy, industrial sweetener. Young girls who start drinking for the first time do that.

    Everyone's a critic.

Well heck. I had a look at that recipe and assumed that you had posted it expecting it to be panned.

You're wrong about that. I wasn't expecting that anybody say anything about the
recipe. It's a standard American style recipe from the days when I was a kid.
People didn't handle ethnic cooking very well. I haven't forgotten what 60's
recipes in America was like. rfc must be going senile.

That is most definitely NOT a standard American style recipe from the days when anyone was kid. No one ever wrote a recipe like that except for your wife's 'auntie.'

A few ingredients are listed but then reading the instructions we find out
we actually need ground beef, tortillas, onions, cheese etc. All of those should have been written out along with the taco seasoning mix, green chilies,
etc. before moving along to the instructions. What the can of beef consomm|-
is for I suspect to cook the beef in, but no clue.

    ~

I don't have any problem with the recipe. I know how to make an enchilada. I don't
mind recipes made for people that already know how to cook. The book is not really
about cooking, it's about her life and times. Most of the recipes in the book are
like that i.e., it's not a cookbook. Here's something that I whipped up today.

I don't post here so people can give their personal opinion on food, things, other
people, etc. So you think a recipe is stupid - big deal. People should have a
knowledge of the history of food in this country - from my friend's recipe of
Velveeta stuffed enchilada, to RVD's old time Irish enchilada, to our modern day
    American enchilada.

In the end, most Mexicans will probably think it's all gringo slop. Americans will

My guess is that you have no idea what an enchilada is so your real question should

Tempeh's great, but after we moved, we stopped making it ourselves. As

i say "we" there for the soups that Mom can eat but
she would not eat the chili i made the past few weeks.
it was delicious and a welcome change for me to have
something spicy. now i've got ten quarts of chili
frozen and those quarts will be worth about 30-40
meals for me for some days in the future but i also
have some fresh chilis still growing out there that i
will need to harvest before any frosts happen and i
can make something with those too. i'm out of chili
powder though so it won't be anything TexMex.

me, i open a can of sardines and eat them from

Maybe vinegar and olive oil. Or lime juice and mayo. (Reminds
me I need to get a lime; I used up the one I had.)

the last limes i had i turned most of them into a
faux key-lime pie filling and had that for dessert for
two weeks. the first batch i just made a single 8oz
package of cream cheese and 1/3 can of sweetened con-
densed milk and then as much lime juice as i could
put in there and still have the texture come out
right - it was pretty tart (just how i like it). Mom
being picky wouldn't even try it (but she does like
the lemon version *shrug* i like lime for a change).
the 2nd batch i used 2 packages of cream cheese and
that took longer for me to finish but it held up fine
in the fridge in a covered container for over a week
and a half. that way i could use up the rest of the
can of sweetened condensed milk and most of the lime
juice, but now i still have some of the lime juice
left that i added some brown sugar to so that i can
add it to cold or hot water and use it up eventually.
maybe i'll use some of it with the chili peppers and
cook them up with onions, garlic and some cheese...
dunno until i do it. roasted peppers also end up
having a really nice flavor to them.
