I road the catrike 40 miles on Thursday at 14.1 mph and was decent day.
Felt pretty good and my top speed got up to 24.7mph. My heart rate is
less than the regular bike but I am working harder to breath.

Today I managed 33 miles with 13.2 MPH but it was chilly at 38 degrees
but wind was ok not bad. I was near 14 mph till last 8 miles cold and
    some wind resistance.

Today though riding i have to get the neck rest figured out not dialed
in yet. I had it up higher at first thinking it was head rest but really
not that the helmet gets in the way. Today to far down and my neck hurt
    from bending forward.

Today really felt the drag breathing. I cannot get a breathing rhythm
down. If I sit up more it does get better but cannot maintain that
position very long. I just feel like I cannot open my breathing even
though the heart rate is lower I am not able to keep at it. I have to
relax and cost a bit. My indoor riding the HR is much higher and I am
working harder in a sense even nreathing harder, but still like I cannot
    get breath.

    Odd I tell.

ItrCOs only a handful of rides thus far? Would take time to get used to the trike itrCOs setup and probably tailor it to you, let alone your body
adapting to the physical demands, I notice difference for example between
the flat and drop bar bikes I have. IrCOd assume itrCOs quite a bit more of change between the road bike and the trike.

The head rests are supposed to be for the neck, just below the helmet.
I tried several different head rests, including one that I made.
Finally, I discarded all of them and ride without one. It took a few
rides to get over the difference. Now I have no tendency to lean back.
You recline on the 700 a bit more than me, so you may need one.

Funny you should mention breathing issues. One of the first things I
noticed was how much better I could breathe when I went to the
Catrike. My lungs preferred being stretched out.

I hope to be riding again this coming week. Ear infection seem to be
    clearing up.

Yes I have heard that from others and yet some have my issue. Hopefully
you back on the Trike soon. It is funny because on my regular bike I can
hit and sustain high power and speed without any real strain to breath
or out of gas. On the trike it just is weird. AI suggest I must do more
belly breathing because my lungs expand down more riding and less when
stretch out. I noticed this more today than the ride 2 days ago. It is
    an adjustment for sure.

With the "cooldown HR" feature of my watch, I noticed recently that
during cool-down my HR sitting on the recumbent bike is 10-15 beats
lower than standing, so I'm not surprised any more that my HR is
significantly lower than on the gravel bike.
