I did get some cheap meat today. There was ground chicken marked down
to $2 for a pound, and these crazy nacho cheese taco kits marked down
to $1. The "cheese" packet went straight into the garbage, where it belonged. https://www.target.com/p/old-el-paso-stacked-queso-crunch-kit-13-25oz-6ct/-/A-88720338
The flour tortillas remained unopened for the future. We used nice,
real cheese. Even with the things we added, the food cost was less
than $3 a person, and that includes the leftovers.

down. They were the first hard shells I'd bought in years.

have the nacho cheese shells, but don't make the tacos in the style
of this "kit." Like I wrote, the "cheese" packet went straight to the garbage, but the concept of an inner crispy corn shell--especially a
nacho one--with a layer of cheese adhering it to an exterior flour
tortilla was brilliant. I modified it by using real cheese.
You know, if you want to make "cheese sauce," all you need to add to
real cheese is heavy cream, though also adding sodium citrate makes
it oh so creamy. I learned about sodium citrate right here, from
Steve Wertz. I made Cheesy Spinach dip today with sodium citrate.
