400 grams of tortiglioni
1 packet of fresh salsiccia sausage
1 red chili
1/2 onion
2 tomatoes
olive oil
1 dl of dry white wine
1/2 tablespoon of fennel
salt
black pepper
parsley
pecorino cheese as a topping
Take of the skin of the sausage and remove the meat, toss the skin away. Caramelize the meat. Put in the vegetables and wine.
Let the pasta be al dente, put in the finished meat and vegetables.
Finish of with some parsley and pecorino cheese on top, before serving.
