I had three very ripe bananas to use up the other day so I made some
banana bread. It turned out nicely. I use butter to make it and I like
    to add chocolate chips.

I used to be into making banana bread because I was really good at it. I got the
wind knocked out of my sails when I found out that my granddaughter's grammy made a better BB than I did. I can't say if I'll ever make it again. Here's a piece that I made back in those happy days of yore.

Yes, yes it does!! I do a better smear job of butter than you. Efyi
I thought perhaps it was cream cheese icing at first glance.

There are some nuts I will risk reacting badly to, like cashews and pistachios, but definitely not walnuts. My son has forced us into a
Christmas brunch coffee cake tradition and he makes it with the nuts
    only on one side.

    What's the white stuff?

    It's very pale yellow. Butter.

Does American butter get a special treatment? I've never seen it so
    white.

Cows kept in barns and fed... not grass. Sometimes they add
marigolds to the feed to make the butter more yellow.

Winter butter is often more pale than summer butter. Always has
    been.

Plus, the photo could be overexposed.

I've got some walnuts in the freezer. Sometimes I add them to farro

I'm not a big fan of walnuts but walnuts in baked goods, will generally improve the end product. Unfortunately, there are people that won't eat banana bread with
    walnuts.
My step-mom made a cake with hazelnuts. I find the taste of those nuts to be unpleasant but the cake was quite a delight.

This is the recipe I use

    2-3 very ripe bananas
    1/3 cup unsalted butter melted
    1/2 tsp baking soda
    1 pinch salt
    3/4 cup granulated sugar
    1 large egg beaten
    1 ts[ vanilla extract
    1-1/2 cup all purpose flour.
    1/2 cup chocolate chips (optional)

Preheat oven to 350 and butter an 8x4 loaf pan
Mash the bananas in a mixing bowl. Add melted butter and blend with a
mixer. Add the sugar, beaten egg and vanilla and continue beating.
Combine flour, salt and baking soda and beat into the wet
mixture.Stir in chocolate chips. Pour into prepared pan and bake for
    55-65 minutes.

Yeah, you've mentioned chocolate chips in banana bread before.-a Not something I'd have ever thought to add.-a Chopped walnuts, yes,
    chocolate, no.

It was my own addition and I have been surprised that so many people
rejected the suggestion. Frankly, I think they are a major upgrade to
    banana bread.

My mother always made banana *nut* bread with walnuts. I still have the
old hand cranked gadget she used to put the walnut halves in to chop
them before adding them to the batter. Good stuff! I haven't made
banana nut bread in years. I have her recipe. I really should do that
    again sometime soon. :)

Make a loaf or muffins and if you feel like it's too much to eat by
yourself, take it to work to share. You know they'll devour it as
soon as they see it. Efyi

There are very few people her Majesty would share anything with. And of
those very few, NONE would accept anything from her royal Highness.

That's pretty much like the one I use except I use more bananas, and bit
more butter, and more *self-rising flour. *

No added salt, either.-a I get around 15-18 mini loaves out of my batch.
Last August a made a good size batch and sent my neighbor and two of
her friends off to Italy with three each in sandwich bags.

Chocolate chips aside do you use mini loaf pans or large muffin pans?
Just curious because I have large silicone muffin pans but no mini bread loaf pans.-a This thread has me wanting to make some banana muffins (with chopped walnuts).

I use a regular bread loaf pan.

Mini loaf pans and mine are silicone as well. The loaves are about the size
of a Twinkie, maybe just a smidge larger, but not much. I gave that Wilton mini loaf pan to my sister-in-law that I used previously.

These are what I use now, and I like these as they have a wire frame around
the edge so they pan doesn't try to fold up when picked up to go into the
    oven.
