Count Duckula is a Vegetarian Vampire Duck (a spin-off character from
the Dangermouse cartoon), rather than vegan.

But there are vegan vampires as well. Two from the world of gaming are:

I read an amusing article somewhere once which claimed that Pandas
are carnivores who have decided, for some reason, to eat only bamboo
shoots. They still have a carnivore's digestive system, so they
get almost no nutrition from their diet meaning that they have to
spend almost the entire day eating and pooping, and furthermore
that they get so little energy from it that they tend to avoid
moving much at all and walk downhill whenever they can. How much
of that is true, I don't know.

It is true, although not so much of a 'decision' as an evolutionary
change because bamboo is far more plentiful than anything else. But
pandas are omnivores and do still occassionally eat insects, small
birds, and rodents when they can catch them.

Don't believe so. Harrison's storyline did, however, result
in a vampire becoming president of the United States during the pandemic.

They are filming a reboot of the AotKT movie this year.

Then there is Kim Harrison's Rachel Morgan universe, where genetically
modified tomatoes led to a plague that decimated humanity.

    Then there are the 'documentaries':
-a- Attack of the Killer Tomatoes (1978)
-a- Return of the Killer Tomatoes (1988)
    -a- Killer Tomatoes Strike Back-a-a (1991)
    -a- Killer Tomatoes Eat France.-a-a (1992)
-a- Killer Tomatoes: Organic Intelligence (in production)

    ;-)

Nothing to do with the virus infected tomatoes in Rachel Morgan's
universe. Those were contrived and genentic engineering was outlawed.

Is that connected to the cinematic gem "Attack of the Killer Tomatoes"?

Don't believe so. Harrison's storyline did, however, result
in a vampire becoming president of the United States during the pandemic.

Yes a vampire because the vampires need the human race and will do their best to
make sure it gets through this difficult time. This is depite the Fae
and the Demons various wizards and wise folk. Demons and elves do not
    get along as formerly the
one was enslaving the other. Elves retreated to Earth and cross-breed
    with humans
to counteract the curse put on them by the Demons.

They are filming a reboot of the AotKT movie this year.

And Rachel and her pals eat tomatoes.

OTOH: Attack of the Killer Tomatoes(1978) - they are carnivores.
