    I just now got a quick and easy pan of Hoppin' John on the
    stove to simmer about an hour or so on a /very low/ flame.
    This fast recipe calls for canned black-eyed peas, a can of
    Ro-Tel, and in my case, it was the mild variety even though
    it still has bit of a kick. One chopped onion, washed rice,
    diced ham, two cups of chicken broth, some garlic and a bit
    of seasoned salt. It will be tasted later if it needs more
    seasoning.

    The traditional recipe calls for this to be served over
    cooked rice but I spied this version online a couple of
    years ago. I like that the rice will absorb the flavor of
    the chicken broth, Ro-Tel, and seasonings.

    The choice of meat is completely optional with some having
    cubed chicken while others have kielbasa or chopped, crisp
    bacon.

    I think a small skillet of cornbread will round out this
    meal.

    I had some frozen pot roast that was a lot like canned beef
    stew i.e., it was overcooked and tasted like it was canned. It
    was okay for meat frozen for a month or so. Later on we went
    to Zippy's and I had a mini-hamburger steak. My wife had chili
    with a burrito. I wasn't hungry so just plain old regular food
    suited me just fine. If I was hungry, I'd go get some fried or
    raw fish.

    How did Zippy's compare to Wendy's, Arby's, Fluppy's and
    Flappy's?

    Zippy's doesn't compare to anything. There's nothing like it in existence. All chain restaurants should be like Zippy's -
    incomparable.

    The amazing thing about Zippy's on the mainland is that the food
    items served seems to be the same as the ones on Hawaii. That's a no compromise policy. Hopefully, the prices are somewhat cheaper. A
    oxtail soup over here goes for $30 a bowl!

    sure enough:

    Like grandma used to make. Simmered for hours until the meat falls off the oxtail bone in a rich broth with peanuts and mushrooms. Served with ginger, choi sum, cilantro and two scoops of rice.

    Meanwhile:

    Wun Tun Min
    Steamed won ton dumplings and noodles in a simple broth with with a piece of uzumaki fish cake and sweet pork char siu. Served with shoyu and hot mustard.

    I know oxtails are not expensive, so the disparity must come down
    to time to prepare.
