I'm forever diving into about:config to change certain settings to
make some websites work, since by default I block some web
functionality that I consider to be a privacy risk. I've tried
privacy extensions that have some of this built in, but they're a
pain and can eat resources pointlessly (or suspiciously?). I don't
want to switch between different profiles with different settings,
that's even more clunky.
Here's a solution from the pre-WebExtensions days:

Unfortunately the "Custom Buttons" extension seems to have never
been ported to WebExtensions. Is there a replacement or another way
to make buttons to change single user-specified about:config
settings in modern Firefox versions? That Stack Overflow discussion
already describes how "bookmarklets" won't work.

What are these privacy risks? Could you give us some examples?
Have you considered clearing your browsing history (automatically) when
you close your browser? This should remove anything/everything that you might consider risky.

I thinwhat youare asking is whether there could be a Firefox-compatible PrefBar?
The current lack of this is why I stick with SeaMonkey.
