Starfield, and of course all the Bethesda Fallout's can be easy mode

Have both/all. Stopped playing Starfield but maybe should give it a
go along with BG3 again (too much to learn for me).
Pretty much none of those I'd put in ER territory for bosses (Roboquest
maybe.)
Mass Effects, and the newest Doom has difficulty levels too, though I
haven't tried either, I'm sure they have bosses too.
Was loving it, why did I stop? I have the trilogy.
I can't actually think of anything that doesn't have something that
could be construed as a boss that involves combat.

Hey Justisaur - please tell Spalls that Elden Ring IS an FPS (too)!! I mean, it is constant battles :-)
If you count playing as an astrologer it sure feels like it. It's just
a magic pew pew from a staff. To the point I started finding that playthrough boring, as pretty much at least the first third of the game
all the other attack spells were worse than the one you started with.
Many a weapon, especially the better ones also have pew pews. My dex
build mostly used Bolt of Gransax's art of war (sort of alt-fire) which
was like a high caliber sniper rifle.
PS, How could I forget EDF! Earth Defense 6 is an awesome well 3rd
person shooter (though some scoping gives you FP,) and you have all the
bang bangs you could ask for. Also has easy mode, though I suggest a
little farming on certain easily farmable levels on hard to get more
advanced weapons that'll make it even easier. Play ranger class for
classic bang bang play, though I personally prefer the Wing Diver which
has limited flight and pew pew sci-fi weapons and is more glass cannon.
Ant might not like it as one of the enemies are minivan sized ants you
kill by the hoard.
I don't know about number of bosses, but pretty much only the last level
had a Boss in EDF 5, unless you count a mothership, mobile base, and
mother ants, wasps, and kaiju which are all over the place.
I can't actually think of anything that doesn't have something that
could be construed as a boss that involves combat.

How far into the game is that? I might buy it!!! hehe
Second mission. First mission is 90% tutorial & intro, with 3 alien
"humans" to kill at the end of it.
It can be played multiplayer with password too, if you do get into it
I'd be happy to come kill some bugs and *spoilers* with you. It does
limit armor and weapons found later/harder missions somewhat on
multiplayer, but not enough to matter on easy or normal, but enough that
I couldn't come in and just carpet bomb everything... probably.

It isn't, not really. It's a single-player game with a stupid
always-online requirement, and one where you can sometimes bump into
real players. But the core of the game is largely single-player. It's
mostly about managing your own ship and trade routes. Sure, you can
band up with others but still, you're doing a lot of the work alone.
Which, again, isn't to say the game is for you. It seems clear that
this genre isn't the sort of thing you're really into (which is fine).
All I ask is that you reject it for the right reasons ;-)

I don't remember if you tried it, Cyberpunk 2077 doesn't have a lot of
boss fights. There are some though, Adam Smasher might be a bit
difficult, maybe like 4 or 5 others, but it's pretty easy for the most
part.

That's playing on the hardest mode though, it has easy mode which should
be a cakewalk without bothering with builds and weapons and such.

FWIW: EDO has "solo" mode, where you won't run into any other players.
It's still "online" though, since whatever you do affects the game's
galaxy.
It also has a kind of in-between mode, "player group", where you'll only
see people in the player group you're signed on with. Some people use
this to avoid the gankers, including those participating in the "Mobius"
PG, which is PVE, but you might run into other "Mobius" players.
