1 c Sugar
1/2 c Butter; softened
1 c Banana; mashed
1/4 c Milk
2 Eggs
2 c Flour
2 ts Baking powder
1/2 c Walnuts; chopped
1 1/2 c Cranberries; coarsely
-chopped
M's note - do not use whole cranberries.
Preheat oven to 350?F.
Grease an 8-1/2 x 4-1/2 x 2-1/2" loaf pan. Mix sugar and butter in a
medium mixing bowl until completely blended. Add banana, milk, and
eggs, mixing well. Add dry ingredients, mixing just until moist. Stir
in nuts and cranberries. Spread batter evenly in a loaf pan.
Bake for 70 minutes or until a toothpick inserted into the center of
the bread comes out clean. Remove from pan and cool.
