• Blueberry pancakes, fresh vs frozen berries

    Every couple of weeks I make a batch of blueberry pancakes, enough for
    four breakfasts and I alternate with eggs. Ran into a problem though.

    Last couple of weeks, berries are from California and they are huge. If
    you want to sit and eat a berry snack, great. OTOH, if you want to make pancakes, they are about double the thickness of a pancake so would not
    work as well.

    Why not use frozen? They are a decent consistent size. That seems the
    only benefit. I mixed them in the batter and they started to thaw and
    left blue streaks. Not very pretty. Once cooked, they did not have the
    same mouth feel of a fresh berry.

    Nope, won't do that again.

    You have to cook them soon after because they will still bleed blue
    after a while, just not as fast or as much.

    FWIW, my wife loves blueberries and prefers the small frozen wild
    blueberries. She won't buy the large frozen or even fresh cultivated.

    As much as I like berries I tend to end blueberries only in small
    amounts. A couple pancakes with berries are enough for me. I sometimes
    have them with yogurt, but only about a tablespoon at a time. A little blueberry goes a long way. I know that a lot of people like blueberry
    pie but I find it to be berry overkill.

    I'll just wait until next year to see if my neighbor's mother
    shares her homegrown berries with me. Even the fresh ones seem
    to be rather tasteless to me until they go into a cobbler.

    I'm sorry to hear about your blueberry woes. I've never been a fan of blueberry pancakes. Blueberry muffins are nice, though. I do prefer
    smaller blueberries for those so I get what you're saying.

    I don't know what experience you have had with blueberries. My personal
    taste is such that a small amount of berries is better than too much. I
    have seen blueberry donuts that were loaded with them and that IMO is
    too much. I prefer to have maybe 4-6 berries per pancake.

    My wife has a morning routing that starts with her going downstairs and
    taking about 3/4 cup of frozen blueberries out of the freezer and
    putting them into a bowl to thaw. Then he has them with yogurt or oatmeal.

    Jenni made jumbo blueberry muffins with cinnamon crumb topping last
    week, and they came out fabulous! I don't think I'd want to just eat
    raw blueberries, but blueberry pancakes sound good too. Our grocer
    regularly puts the blueberries on sale buy one get one free. Ed could probably just slice the larger blueberries in half.

    I thought of that but I don't think they would be as good when they hit
    the griddle. Too mushy inside. I'll have to try some at some point to
    be sure.
