Low quality food a result of monopolization of food:

Monopolization causes low quality, defrauding restaurants
    and consumers.

All correct, but some of us have known about this for years. I'm almost surprised that by now, Sysco hasn't stopped putting their name on their trucks. The kind of folks who order shit like "jalapeno poppers" should
expect that it's just frozen, factory crap. It's be a hoot to see a
truck stop that had a sign that said, "Sysco trucks are welcome at our
    pumps, but that's it."

I'm way too old and tired to have a business, but if I were 30 years
younger, and had huge amounts of capital, I'd love to own a truck stop restaurant. Long haul truckers don't have many pleasures in life, and
can afford the cost of freshly made food, like beef stew made from
carrots and potatoes in-house. Prices could easily fluctuate with market costs, and specials could be run until the ingredients--most often the
meat component--ran out. Hey, look at what I just scored off eBay. https://photos.app.goo.gl/P9V5Sy6jwELR7Lju8

I recently got a day pass to Restaurant Depot. Yes, they have some of
that same frozen, factory made, fry/microwave and serve stuff, but
there's a lot of fundamental ingredients that a cook might use to
prepare foods freshly. I'm planning on going back in a few days, and I
have a shopping list, a few purchases based on what is discounted in
    their current ad.

    Restaurant Depot list

    40% cream
see if they have miscut wings
    stanislaus pizza sauce
    paper napkins
    Minor's beef base
00 pizza flour 12.5kg di primordine
    yeast saf gold
    2# frozen spinach
