• Dream inspired onions and cheese

    From Ed P@esp@snet.n to rec.food.cooking on Wed Aug 27 20:14:32 2025

OK, I have some weird dreams. Last night I had one where I made baked
onions stuffed with cheese. Problem is, I don't recall much of the
dream, but I was putting them into the oven. Someone said the cheese
would drip and I agreed some would, then I woke up.

Thinking about it, how would you stuff an onion? How would a baked
onion be anyway? as good as fried and caramelized?

It did get me thinking though. What if I made some thick slices and
baked them. Should they be baked to near done and some cheese added?

I really like fried onions, but never made them with cheese. Maybe the
whole thing is just a stupid dream, but there is some potential. Going
to the store tomorrow so I will get a couple of onions.

Onions and cheese should go well together. I encourage your experiment.

One thought is to batter and fry the onions then top with cheese, then
put under the broiler for a few minutes.

Of course, this is more of an appetizer dish.

Is there a difference between baked and roasted? We often throw one or
two onions into a roasting pan with a roast like beef, pork or chicken.
They are delicious. They get slightly caramelized but the degree of that
would depend on how long they are roasted.

Google "baked onion with cheese" and there are a number of recipes for
baked onions with cheese. One involves laying grated cheese on a pan and placing thick slices on onion over them and baking. Some involved thick
slices of onion and putting grated cheese on top then baking.

There was recent discussion of boiled onions with cream sauce. Someone
thought it was horrible but I remember my mother making that and I liked
it. I suppose you could add cheese to the cream sauce.

Boiled is OK, bur roasting, IMO, would be a better flavor. I'm going to
try a couple of things to see how it goes.

You have inspired me for an experiment to carry out
the next time my wife has any sort of lengthy
    appointment away from the house.

I am thinking Dremel (tm) and the smallest attachment
for a 'Shop-Vac'. If it works, get in touch with both
Dremel & Shop-Vac to formalize collaborative engineering
to design a device that is a bit of both. (pun intended).

Call it a 'dealliumnator' for free Harry Potter marketing.

i make what i call onion bombs. posted photos of them a while
    back. reposted below.

    ----
core out onions leaving a few layer shell. use the cores for
something else delicious like onion stew.

stuff with something. we use my wife's meatloaf recipe. some
diced high melt point cheese mixed with the meat sounds good.
    thanks for the idea.

wrap with bacon, grill, add bbq sauce and enjoy.

That actually sounds great, heyjoe... and I'm not a huge fan of onions.
The roasting would mellow the taste, especially since it calls for
    yellow sweet onions.

I have an old recipe around here somewhere that is similar but it calls
for putting some cooked sausage in the center of the onion with cheese
    before baking them.

I imagine you could do something like "blooming onions" at Texas
Roadhouse. Maybe if you quarter the onions and roast them slowly in the
oven, they'll open up, and you can top with cheese near the end. It
    sounds like an interesting idea.

I was wondering how that went when you posted it I can't say I've had anything like it. Is it just a bechamel sauce with onions in it?

The dish that most people would avoid at our family's thanksgiving was grandma's oyster casserole. Personally, I didn't mind a small helping
of it, but it's not something I've ever had the urge to make.

i'd like them about any way, we eat a lot of onions and
one old version was onions, tomatoes and cheese then put
in the broiler for a few moments to melt the cheese. some
parts would be more done than others - the outcome was a
desired one as the variety of tastes and textures for a
simple meal like this was good.

ham was also a sometimes addition.

Use a square glass baking pan lined with foil to make cleanup easier.
I did that once with feta. It was actually good if you use just
minimal feta. I made it sort of 'blooming onion style' with a spritz
of good olive oil then sprinkled with feta. Serve surrounded with
    slices of black olives.
