    American bacon is what we call streaky bacon. It's that fatty belly
    meat.
    We civilised types eat back bacon (loin).

    And of course, most meat in the USA is burnt (aka flame grilled). This
    makes it crispy.

    BTW, I know this from experience. I used to travel to the USA quite
    often.

    I prefer streaky bacon since it has more taste - but I never overcook
    it[1] to the point where it is dessicated.
    The only time I eat back bacon is when I have something like a bacon
    butty in a cafe, they always use back bacon.

    [1] I always grill bacon, it removes the excess fat.

    The worse "bacon" is what's called "Canadian Bacon" in the USA, it's not bacon but fat-free ham.-a Actual bacon in Canada itself is back bacon and streaky bacon.

    Back bacon is not sold in stores here, mail order only.

    Interesting. I have always assumed that what is sold as Canadian Bacon,
    was in fact, the same thing we call 'Back Bacon'.

    It is actually illegal to call back bacon Canadian bacon here.
