    I saw common people in the philippines eating that way. In the center
    of the layout is a huge pile of rice. Arrayed around it is small
    dishes of various meats and sauces. You grab some rice between thumb
    and first two fingers, then gather some meat and dip in a sauce using
    the rice and not touching the condiments. It actually makes some
    sense. Why should diners be limited to one meat and one sauce? You
    would use sticky rice, of course.

    He cannot be seen as pandering to anybody in the us. We don't eat
    that way. And I suspect he mostly uses a fork too.
