I like Gentoo too. Stable, mature system, never had issues with it. Only installation and initial configuration is time consuming, after you
install what you need, set USE flags etc. the difficulty level of administrating it is not greater than using Ubuntu or Debian. I use
Gentoo both on server and laptop.
